The vineyards of Dominio do Bibei extend over an area of 140 hectares, of which 32 hectares are dedicated to vine cultivation. These vineyards are located at a wide range of altitudes, from 350 to 920 metres above sea level, taking advantage of the diversity of microclimates and orientations, mainly towards the north, to cultivate native varieties. The soils are mainly schist and granite, which contributes to the uniqueness of its wines. The winery focuses on indigenous varieties, with Mencía being the main red grape, accompanied by historical varieties such as Brancellao, and to a lesser extent, Mouratón, Sousón, Caíño, and Garnacha Tintorera. As for the white grapes, Godello leads, followed by Albariño, Dona Blanca, Treixadura, and Torrontés.
Philosophy
Dominio do Bibei 's philosophy focuses on making wines that reflect the unique terroir of the Bibei Valley, with a deep respect for tradition and landscape. The winery employs a combination of traditional and modern techniques in winemaking, using a variety of vessels such as wooden vats, barrels, and concrete eggs to ferment and mature their wines. This approach allows for a pure expression of the indigenous varieties and terroir. The winery, under the guidance of the renowned Sara Pérez and René Barbier Jr. until January 2015, produces around 100,000 bottles annually. Its wines, such as Lalama, Lacima, and the top Dominio do Bibei, are renowned for their freshness, acidity, and a perfect balance between fruit and minerality, reflecting the project's leitmotiv of creating wines that are a faithful mirror of their origin.
The wines of Dominio do Bibei stand out for their ability to evolve in bottle, especially the whites Lapola and Lapena, which combine work in foudre, large format barrels, and cement eggs, showing the versatility and richness of the Godello and other white varieties in the Ribeira Sacra.
