Champagne Clandestin is located in Buxières-sur-Arce, in the Côte des Bar region. This winery was founded in 2017 by Benoit Doussot, a young Meursault-trained oenologist. Since its creation, Champagne Clandestin has been a confidential reference for wine purists, being a relatively new and still under the radar négoce project.
Vineyards
The vineyards of Champagne Clandestin are located on cool terroirs facing north and northwest, with Kimmeridgian limestone soils that give a remarkable straightness to the wine. These terroirs, historically less valued by the great Champagne houses who preferred southern exposures, are the origin of the cuvée Les Semblables, made from 100% Pinot Noir grapes.
In addition, the cuvée Les Grandes Lignes is produced with Chardonnay from a vineyard located at the top of the Sorbée hill in Buxières-sur-Arce, with Portlandian limestone soil. This terroir can compete with the best crus of the Côte des Blancs. All the vineyards are certified organic and the grapes are grown biodynamically, respecting the differences and details between plots with different exposures.
Philosophy
Champagne Clandestin focuses on producing authentic and original wines, using winemaking techniques that have made the house of Vouette & Sorbée famous. The musts are fermented with indigenous yeasts, and the wines are made in demi-muids (600-litre barrels) for Les Semblables and in bourguignonnes (228-litre barrels) for Les Grandes Lignes. After 10 months on the lees, the wines are bottled and kept for a further 15 months for foaming.
Champagne Clandestin currently produces two single-varietal cuvées always from a single vintage year. These champagnes are not dosed in order to preserve their purity and authenticity, and their production is limited to approximately 13,000 bottles per year.
