Dhondt Grellet is located in Flavigny, near Avize, in the heart of the prestigious Côte des Blancs, a region known for its exceptional champagne wines. The winery was founded in 1986 by Eric Dhondt and Edith Grellet, who decided to stop selling their grapes to merchants and start producing their own wines. In 2010, their son Adrien Dhondt, at the age of 25, took the reins of the winery, taking his family's champagnes to a new level.

Dhondt Grellet 's vineyards cover approximately six hectares, with an average age of forty years, and are mainly classified as Grand Cru and Premier Cru. These vineyards benefit from light, chalky soils, and most of them are south-facing, which is ideal for vine cultivation. The vineyards are mainly located in the Grand and Premiers Crus communities of the Côte des Blancs, in places like Cramant, Chouilly and Cuis. They also grow Pinot Noir in the Vallée de la Marne.
Philosophy
Dhondt Grellet 's winemaking philosophy focuses on producing expressive and unique wines, reflecting the terroir of each site. Adrien Dhondt adopted biodynamic viticulture since 2013 (without certification), which has been essential to his high quality standards. Harvesting takes place later than in other regions, but at a higher ripeness, contributing to the aromatic complexity and balance of the Champagne.
Each parcel is vinified separately and fermentation takes place spontaneously using natural yeasts. Most of the cuvées are matured in wooden barrels, and malolactic fermentation is not prevented. Minimal dosage and hardly any sulphur is used so that the character of the champagne is fully expressed. The result of this minimally invasive approach is pure and highly complex champagnes, extremely vinous and reminiscent of the great white wines of Burgundy.
