The Bimbache winery is located on the island of El Hierro, the smallest and least visited of the Canary Islands. Despite its size and relative obscurity, El Hierro has a rich winemaking history. The island is known for its rugged and rugged topography, being the youngest of the Canary Islands with an age of 100 million years. The Bimbache winery was created in 2018 by Rayco Fernández, one of the founding members of Puro Rofe in Lanzarote, and his winemaker, Pablo Matallana. Together, they saw the potential of El Hierro and were convinced of its bright future in the world of wine.
The name "Bimbache" refers to the first inhabitants of the island before the arrival of the Spaniards in the 15th century.Rayco Fernández began his career as a sommelier and wine merchant, being one of the first to distribute wines from emerging producers such as Envínate. Pablo Matallana, meanwhile, is a winemaker with an impressive background, having studied at the prestigious Polytechnic University of Valencia and worked in iconic wine regions such as Priorat and Pomerol.
Vineyards
El Hierro has only 167 hectares of vineyards, but surprisingly, it has the greatest genetic and clonal diversity of vines of all the Canary Islands. The Bimbache vineyards cover 5 hectares distributed among the three municipalities of El Hierro: Valverde, Frontera and El Pinar. The island has a maritime and volcanic climate, protected from excessive heat by the ocean and a high pressure system known as the Azores anticyclone. The soils are a mixture of volcanic sands, clays and, due to the uplift that created the Canaries, limestone rock mixed with volcanic material can also be found.
Philosophy
Bimbache's philosophy focuses on producing wines that tell the story of their place of origin. Rayco and Pablo are advocates of wines that reflect their terroir, and their approach in El Hierro is no different. All the vineyards they control are farmed organically and the grapes are harvested by hand. The whites are whole-cluster pressed, while the reds are mostly destemmed. All fermentations are spontaneous, and there is currently no temperature control, apart from the fact that the winery is located in an exposed and windy part of El Hierro. These wines are salty, acidic and flavoursome, combining the best qualities of being mountain, ocean and volcanic wines in one.
