Pascal Cotat domaine is placed in Sancerre, a beautiful village in the heart of Loire, and it is a clear example of what is commonly known as “vignerons de garage”. Funny that Pascal has also the Peugeot vehicles representation for Sancerre.
Their history dates back from year 1947 when Cotat brothers, François and Paul, started producing wines jointly, however distribution and sales where done under different brands. Due to some French government legal changes prohibiting independent producers to sell the same wine under different labels, they decided to retire and handle the business to the next generation: Pascal (François' son) and François (Paul's son). From this moment on, there will be two different wine estates and two new independent wineries.
Pascal Cotat kept 2,5 vineyard hectares, most of them Sauvignon Blanc and a small plot with Pinot Noir, all placed in the best part of Chavignol, what we could consider the most distinctive zone within A.O.C. Sancerre, famous just like its “Crottin de Chavignol” cheese. This land gathers two very favourable conditions: soils have a high calcareous content (Kimmeridgiense) which is especially important to provide minerality to the wine and secondly they have south exposure, which is excellent for the ripening of the grapes.
His celebrated wines are: La Grande Côte, produced in a 1 hectare plot settled in a steep hill, with a gradient of 30%, and with average 60 years old vines. Soils here are rich in clay. This is Pascal and François Cotat Monopol and its name has been registered as protected trademark. On the other hand, Les Monts Damnés is a famous lieu-dit in Chavignol where Pascal owns 1,5 hectares in the highest part, with average 35 years old vines.
Pascal has also another 12 hectares of Pinot Noir in Sancerre which are used for his rosé production.
Harvest is carried out manually and looking for perfect clusters ripening. Wine making is traditionally performed. Each piece of land is treated separately in old oak barrels, with all its casing covered in bitartrates, slowly appeared due to years and years of wine ageing. Pascal racks the wine twice, following the lunar cycle and wine is bottled on April and May. Moon phases are also taken into account during the bottling and it is done on the last quarter before the new moon. No filtering or clarification of the wine is performed.
