Alexandre Jouveaux 's vineyards cover approximately two and a half hectares, distributed in small plots near Uchizy and in other areas of Mâcon. These vineyards are surrounded by forests, which contributes to a diverse and healthy ecosystem. The predominant soil is chalky, which imparts characteristic notes of citrus and stone to the wines. Jouveaux grows mainly Chardonnay, along with small parcels of Pinot Noir and Gamay. Alexandre Jouveaux 's winemaking philosophy focuses on minimal intervention. Since his first vintage, he has avoided the use of additives, including sulphites, due to a personal allergy. The grapes are pressed directly and the must is transferred to old foudres, where the wines rest on their lees until they are ready to be bottled by gravity directly from the barrels.
