Chavost is the ancestral name of the village which was located between the church of Saint-Martin and the hill of Mont-Félix on which a castle once stood.
Location and history of the winery
The winery is located in Chavot-Courcourt, south of Épernay, a French town and commune in the Champagne-Ardenne region. The winery was founded in 1946.
Today, the vineyards are run by the brilliant young winemaker Fabian Daviaux.
His vision is to create a special range of natural wines, a goal he apparently conquered with ease. It is not easy to create elite champagnes without intervention, but he succeeded.
Fabian produces wines and markets Chavost Champagnes. Having vinified over a period of 10 years in various parts of the world, he returned home with the idea of vinifying differently and producing atypical champagnes, with as little or no input as possible.
Vineyards
The winery works with 5 hectares (12 acres) of hand-harvested vineyards, currently in conversion to organic status.
Philosophy and commitment
From the ancestral winegrowers we have inherited their strong collective values, solidarity, and love of the land.
Consequently, all love has been put into growing high quality grapes to produce unique champagne wines in a sustainable way.
The winery has an inescapable commitment to the environment, the terroir and the excellence of a new range of wines. Without added sulphites, unique, distinctive and atypical, enriching the existing traditional range.
Wines
The natural champagnes of the Chavost winery are full of uniqueness, authenticity and strong personality. Each one comes from a masterly vinification.
The winery respects biodiversity and cultivates its vineyards with little or no intervention in an environmentally conscious way.
Indigenous yeasts are used for fermentation. Furthermore, no chemical additions, acidity management, fining or filtration of the base wines are carried out.
The grapes used to make these unique wines are Chardonnay, Pinot Meunier and Pinot Noir for the Blanc D'Assemblage Brut Nature in which the base wine is vinified entirely in thermoregulated stainless steel.
The Rosé de Saignée is made from Pinot Meunier, with an addition of Pinot Noir. Eureka! is a Brut Nature based on Pinot Noir with equal parts of Chardonnay and Pinot Meunier.
The vinification follows the same principles as the sparkling wines - highly recommended!
