Charles Dufour was born and raised in the Champagne region in 1982. His wines, made from the application of organic and biodynamic viticulture techniques, led him to obtain in 2010 the Ecocert organic certification, an ecological certification difficult to achieve in the Champagne region.
From there he has managed to produce excellent natural wines that delight the most demanding palate.
History of the winery
Charles Dufour is a young winegrower and oenologist who farms 6 hectares in Landreville, in the Côtes des Bars region (Aube).
In 2006, before the retirement of his parents, he inherited part of the family vineyards and decided to start his own project.
Slowly but surely, he converted these vineyards to organic and biodynamic agriculture, which he completed in 2010, with the Ecocert organic certification.
In that year he launched his own production line under the brand "Champagne Charles Dufour" and "Champagne Bulles de Comptoir".
Production techniques
In the vineyard, only copper, sulphur, infusions and biodynamic preparations are used. At the beginning, organic agriculture was introduced, starting with the elimination of herbicides.
In the winery, the process is carried out without enrichment of the must and alcoholic fermentation is done with only indigenous yeasts, without filtration or clarification of the sparkling wine bases.
Ageing is done in wood and lees, in a spirit of respect for good wine and with the desire to encourage respiration. Sulphur dioxide is eliminated at all stages of the winemaking process.
The results of the winemaking process are wines of great varietal expression, minerality and a demonstration of the winemaker's know-how.
Vineyards
The vineyards are located in the communes of Landreville, Essoyes and Celles-sur-Ource.
Dufour farms six hectares organically and has progressively moved towards biodynamic and organic viticulture.
The soils of his vineyards are located in the Côte de Bar region of the Aube department, where the soil composition of the estates changes from clay to limestone.
Wines
Despite the low sulphur content, their wines are straightforward, express the varietal character and terroir, and are very well known.
His range of Bistrotage wines is the result of grapes grown in the vineyards of his mother's estate, which is why the label reads Domaine Françoise Martinot.
He produces essentially sparkling wines from certified Pinot Noir, Chardonnay and Pinot Blanc varieties.
Obtaining organic certification is a difficult process in Champagne due to the rainy and cold weather conditions. Nevertheless, Dufour managed to create excellent natural wines with a superb artisanal signature.
