Buy Wine from Microbio Wines
Microbio Wines is a winery that defies time and convention. Ismael Gozalo, the soul and architect of this project, is not just another name in Spanish viticulture: he is a pioneer, a visionary who carries in his blood the legacy of generations dedicated to the vineyard in Nieva, Segovia. His history is intrinsically linked to Verdejo, a variety he has worked with devotion since his days at Ossian, the winery with which he redefined the concept of Rueda whites. However, Microbio Wines is another story, one that is written outside the denominations and imposed rules, a story of purity, identity and unfiltered expression.
The land as a canvas, the vine as a paintbrush
The Microbio Wines vineyards are a living testimony to resilience and beauty. Situated on sandy soils, with a base of clay and pebbles, they are home to pre-phylloxera vines more than two centuries old. These vines, cultivated organically and according to the principles of biodynamics, are an ecosystem in themselves. Minimal intervention is the golden rule: no herbicides, no systemic treatments, just the natural balance of flora and fauna dictating the rhythm of the vineyard.
Ismael understands terroir not as an abstract concept, but as a living entity that expresses itself strongly in each vintage. The altitude of over 900 metres, the thermal contrasts between day and night and the particular composition of the soils give rise to wines of incisive minerality, electric freshness and moving depth. No make-up, no concessions. Just the essence of the land bottled as honestly as possible.
The cellar - A laboratory of pure expression
If in the vineyard minimal intervention is the rule, in the cellar the philosophy is no different. There are no fixed recipes or pre-established formulas here, only a deep listening to the wine at each stage of its evolution. Spontaneous fermentations with indigenous yeasts are an unwavering rule, allowing each plot and each vintage to speak with its own voice. Ageing is carried out in a variety of containers - amphorae, vats, wooden vats and stainless steel tanks - chosen with absolute respect for the raw material.
Microbio Wines wines defy conventional labels. They are not simple Verdejos, nor ordinary reds. They are vibrant, irreverent and surprising liquids that show the most sincere and radical side of natural Spanish wine. Each bottle is a window into a microcosm of fermentation without artifice, of textures that evoke the earth and aromas that transport us to the Segovian fields where they are born.
The taste of freedom
Microbio Wines wines do not seek to please all palates, but to provoke emotions. In their collection we find whites aged for a long time on lees, macerations with skins that reveal the most untamed side of the Verdejo grape, reds of unusual finesse and ancestral sparkling wines with ethereal bubbles. Each reference is a small manifesto of freedom, a vindication of wine as an artistic expression and not as an industrial product.
Wines such as Microbio, Kilómetro 0, Sin Nombre or Rack have won over sommeliers and amateurs in search of authenticity. They are wines that breathe life, that evolve in the glass and in the bottle, that break with standards and defy the established. They are proof that tradition is not at odds with experimentation, and that nature, when left to speak, is capable of telling stories that no human hand could match.
More than a winery, a movement
Microbio Wines is more than a personal project; it is a symbol of resistance to the homogenisation of wine. Ismael Gozalo has shown that it is not necessary to follow the beaten track to achieve greatness. With humility, passion and a deep knowledge of his environment, he has created a unique universe where each wine is a reflection of his non-conformist vision and his unwavering love for the vineyard.
Those who taste a Microbio Wines wine don't just drink a Verdejo from Segovia: they drink history, territory, risk and truth. And in a world saturated with labels and marketing, finding something so genuine is, without a doubt, a priceless luxury.
