Makatzak Wild Wines is located in the heart of Gipuzkoa, in a corner where the Cantabrian Sea and the mountains seem to embrace. It is not just any winery. It is a project born of passion, patience and a deep respect for the land.
The vineyard, christened Sorgintxulo ("the witches' cave"), had something magical about it. Perhaps it was its southern exposure, perhaps its proximity to the sea, or perhaps its history. What is certain is that, after two years of tireless work, in 2021 they achieved their first harvest. It was the beginning of a journey that today continues to surprise those who taste their wines.
Vineyards
If there is one thing that defines Makatzak Wild Wines, it is its deep bond with nature. In three hectares of vineyards, mostly Hondarrabi Zuri with some Hondarrabi Beltza, they work with the utmost respect for the environment. Aitor and Jon believe in viticulture as a dialogue with the land, not as an imposition.
The terroir is special. Slate soils, natural drainage and an Atlantic climate that challenges the vines with its constant humidity. But here's the trick: the vines grow on vines, elevated, away from the wet soil, looking for the light.
There are no shortcuts. No chemicals or aggressive interventions. Only organic, natural, regenerative and biodynamic agriculture. They are not yet certified biodynamic, but they work as if they had it. It is more than a label, it is a philosophy.
At Makatzak, wine is not "made", it is left to be. Its production follows the rhythm of nature, unhurried, without unnecessary manipulation.
The grapes are harvested by hand, in small boxes, and always with several passes. There is no massive harvesting in a single day; each bunch is cut at the right moment. In the winery, fermentation takes place spontaneously, with indigenous yeasts and without filtering or clarification. The result is a txakoli that breathes authenticity, with the minerality of the soil and the freshness of the sea in every sip.
Makatzak Wild Wines does not seek technical perfection, but the pure expression of the vineyard. And that, in a world of increasingly homogeneous wines, is a breath of fresh air.
