Description
Dominio do Bibei is a red wine that reflects the essence and character of the Ribeira Sacra, a wine region in Galicia known for its rugged landscapes and high quality wines. This wine is the result of a coupage dominated by 80% Brancellao, complemented by 20% Mouratón, indigenous varieties that give the wine a unique identity. The production of this wine is extremely limited, with only 1,963 bottles, which underlines its exclusive character and the attention to detail in its production.
Winemaking
The tasks to make Dominio do Bibei are carried out with a deep respect for tradition and terroir. The vineyards, located at altitudes varying between 250 and 550 metres above sea level, benefit from a soil rich in schist and slate, and a climate that, despite the rains during the vintage, allowed the grapes to ripen over a long and balanced period. The grapes are harvested by hand, carefully selecting the bunches in the vineyard and in the winery. Vinification includes pre-fermentation maceration and fermentation with indigenous yeasts in open French oak barrels, followed by ageing for 14 months in three-use French oak barrels and 6 months in a 15,000-litre foudre.
Taste
Dominio do Bibei is a reflection of its careful winemaking and the richness of its terroir. In the mouth, it is intense and elegant, with a marked spicy character that perfectly complements its notes of stewed fruit. The nose reveals an intense fruitiness and a light spicy background, while its very light, low robe colour anticipates a medium-bodied wine, but with great complexity and finesse. The recommended serving temperature of 16 °C and the possibility of aerating it a couple of hours before drinking maximise the expression of its qualities, making Dominio do Bibei a unique sensory experience, ideal to accompany red meats, roasts and game dishes.
