Within this category there are various aromatic and gustatory registers, however all share good maturity, tannic and acidic concentration, tension, tertiary aromas of aging and balance over the years in the bottle. They are ideal wines to drink at a temperature between 14 and 16ºC (57.2 and 60.8º) accompanied with any kind of white or red meat stews.
In Spain, we must look for them in Atlantic areas such as Galicia or El Bierzo with the Merenzao, Mencía, Albarello, Bastardo or Garnacha Tintorera varieties, at the top-of-the-range wines with long breeds. In France, the best examples are the wines of Burgundy with the queen variety Pinot Noir and Syrah in the North Rhone. Sometimes we also find within this record wines made with Cabernet Sauvignon as is the case of Bordeaux or Catalonia, as well as wines from Madrid and the Sierra de Gredos where Grenache is drunk.
