The Dario Prinčič winery is located in the village of Oslavia, north of the town of Gorizia, just a few steps from the Slovenian border. From its location, it is possible to see Gorizia (Italy) and Nova Gorica (Slovenia), and behind these towns lies the Sabotino mountain, witness of battles during the First World War.
. Behind the winery, there is a monument where 60.000 soldiers are buried. The winery was founded in 1993 by Dario Prinčič. Before this date, Dario sold his grapes to local wineries. The winery is spread over 10 densely planted hectares, with approximately 8,000 vines per hectare. Almost all of the vineyards face southeast. Due to the steep topography and the clay and sandstone soil, all work is done by hand. Harvesting usually lasts from mid-September to mid-October, but the grapes are harvested when they are ripe. During the summer, green pruning is carried out to produce fewer clusters, resulting in a more concentrated must.
Philosophy
Dario Prinčič began experimenting with grape maceration in 1999. The following year, he decided to apply this technique to his entire production. The length of maceration varies according to the grape variety, from 8 days for Pinot Grigio to 45 days for Cabernet Sauvignon. Throughout the fermentation process, the grape skins are manually dipped 3-4 times a day to ensure that they are always covered with wine. Pressing is done gently with a pneumatic press, and then the must is racked into old wooden barrels. Before bottling, the wines rest for 6 months in stainless steel tanks for natural clarification. During bottling, a small amount of sulphur is added (15 - 20 mg/l). The wines are not filtered and often have a bright orange colour in the glass.
