The size of the winery is around 8 hectares, which are cultivated with local grapes and are located specifically in Sant Martí Sarroca, a village in the Penedès region.
Like many wineries in the area, it uses ecological techniques for the production of its wines, as its philosophy is based on minimal chemical intervention and the use of indigenous yeasts.

Thus, from the harvest stage, manual harvesting methods are established, using wild yeast for the fermentation process of all its wines.
Bodega Clandestina is a project that can be classified as ecological and natural, as its vision is to remain outside of any denomination of origin or regulation, and in this way avoid the existence of barriers that make it impossible to create free wines that express their ancestry.
Techniques used
As we have already mentioned, wine production at Bodegas Clandestina is ancestral, as the idea is to minimise the intervention of chemicals or machinery that modify the natural processes of the wine.
During the harvest, the grapes are carefully selected, ensuring that they arrive at the winery with their skins intact, and that they are in an optimal state of maturity, to guarantee a balance between acidity and sweetness.
Once in the winery, they are taken to ferment and for this purpose, different types of materials are used in the manufacture of the barrels used for this phase. For the ageing of their wines, they also use amphorae, glass demijohns and other types of old barrels.
As we have mentioned, no additives are added to the wines, nor are they subjected to filtering or fining processes, as they consider this to be a way of maintaining the structure and body of the wine.
Bottling is the final stage, and it is also carried out with ancestral practices, as the oenologist's philosophy is to preserve the personality in each wine and the articular texture that defines them.
The entire range of wines from this winery are produced with Xarel.lo. They are characterised by their elegance and low alcohol content. The level of acidity also defines them very well, as in this area it is very common to have temperature changes between day and night, which promote chemical oxidation processes.
