Fedellos do Couto began its rise in the wine market in 2013, with the philosophy of making wines from the different grape varieties of this locality.
The name Fedellos comes from a Galician word meaning naughty and O Couto from the location of the winery in the Pazo do Couto. The latter is an area surrounded by nature and structures that narrate the history of the Ribeira Sacra.
The Fedellos Do Couto Winery began as a project driven by the passion of the Taboada family, who ran the winery for several generations.
Years later, Luis Taboada decided to team up with the winegrower Pablo Soldavini and the oenologists Curro Barreño and Jesús Olivares, in order to produce three red wines with a superior quality standard, classified as Cortezada, Lomba dos Ares and Bastard.
But they also set about establishing methods and techniques that would ensure the natural expression of the terroir from which the fruit comes, using native Galician varieties without the addition of sulphites or intervention from the terroir.
The result of these techniques is a catalogue of very fresh, light and low layer wines.
Techniques used
At the Fedellos Do Couto winery, all stages of the winemaking process involve minimal intervention with the fruit, as the main objective is for the wine to adopt the nuances of aromas and flavours of the terroir from which it comes.
For this reason, no chemical elements are integrated in the cultivation of the grapes, nor is the ripening of the grapes promoted with industrialised processes that may alter the final flavour or aroma before processing. In fact, the cultivation is 100% manual.
In this winery, the so-called heroic viticulture is applied, as the vines are cultivated in the canyons of the Sil and Bibei rivers, under extremely difficult conditions.
The techniques used converge with ecological methods that respect the environment, but which also ensure that no artificial yeasts are added and that the wine is not subjected to clarification or filtering processes.
Vineyards
The climate of these vineyards is classified as Mediterranean, as it has a high degree of humidity. However, experts determine that it is a winery with microclimates and a variety of soils and altitudes, due to the fact that its vineyards are divided between those of the river Sil and those of the river Bibei.
As mentioned above, the vineyards are on terraces and therefore the viticulture applied is defined as heroic.
Fresh and low layer wines
