Antony Terryn is a French winemaker and viticulturist who settled in Toro, Spain, in 2004 after travelling the world. From cultivation to processing
To create authentic, personal wines with soul, it is important that the work in the vineyard and the winery are closely linked. At Dominio del Bendito, grapes are carefully selected and methods respectful of the grape and its terroir are used to create wines that reflect the true essence of the vineyards from which they come.
Concrete tanks with epoxy resin are used for the more concentrated wines and the reds are allowed to follow their natural process until they reach a fairly high temperature during fermentation. The reds also receive careful and pampering ageing to ensure that they reach a long and prosperous old age.
The vineyards
They are small estates in one of the best terroirs in Toro and in all of Spain, a historic and exceptional place that always produces good grapes: La Jara. This estate is unique and ancient, located next to the Duero river, with exceptional climatic and geological conditions. The climate is extreme continental, with Atlantic influences, and semi-arid, with temperatures that can vary from -8℃ to 40℃.
There are many hours of sunshine and the altitude of 740 metres offers a large thermal amplitude between night and day, with cool or even cold nights (down to below 8℃) in the summer. The deep soils with a high proportion of sand and pebbles offer excellent drainage to the vines and force them to go deep to look for the necessary elements, which gives us quality production and the true expression of the terroir.
These soils also have another great peculiarity that is only found in a few terroirs in the world: the vines are planted on their own roots without grafting onto an American rootstock.
The philosophy behind the success
The concept of the famous terroir of the Dominio del Bendito winery is to let the soil and the grapes speak for themselves and then transform them into wine efficiently and with little intervention. Since 2004, the vineyard has been farmed organically using traditional techniques to produce wines of great Toro character.
The winery believes in Tinta de Toro and in the balance of the vineyard, so they use very little sulphur and plant extracts harvested from the plots. Although they do not consider themselves biodynamic, they are inspired by practices they consider beneficial.
They also keep different varieties of trees such as fig, almond and Cermeño, as well as field flowers and wild leguminous plants that help to maintain the native fauna. During the harvest, many insects from the vineyard such as ladybirds, spiders and earwigs are recovered using a grid on the sorting table and returned to the field.
