The barrels
The winery has stainless steel truncated cone-shaped tanks, as well as four French oak vats where the alcoholic fermentation of the winery's premium wine takes place.
The aging cellar has automatic temperature and humidity control and houses some 3,000 barrels, 90% French oak, 8% American oak and the rest with different varieties in the experimental phase. There are also six solid French oak vats in the cellar for blending.
The new French oak barrels used for aging most of Baigorri's wines are another distinctive feature. They achieve the perfect balance between the delicacy of French wood and the intensity of the Rioja Alavesa grapes, always cultivated under principles of sustainability and harvested by hand under strict selection.
The history of the winery
It is not necessary to travel back many years, simply to 2001, to learn how such an innovative initiative was conceived and carried out in such a historic and emblematic region as La Rioja.
Jess Baigorri, promoter of the project, and the architect Iaki Aspiazu set out to design a modern winery with an architecture focused mainly on oenological principles. The approach focuses on favoring the natural conduction of the grapes and wine throughout the winemaking process, rather than subjecting them to the operation of pumps or artificial means that could alter their qualities. To this end, a vertical structure was created to allow gravity transport.
The winery and its architecture
Bodegas Baigorri is located in Samaniego, next to the A-124 highway. From the outside, the only thing that can be seen is a glass cube with a zinc roof and placed on a concrete base with wooden slats. This 400 square meter urn is located on top of a hill that slopes gently down to the opposite side of the road and serves as both a reception and a viewpoint, with wonderful views of the surrounding vineyards, and is surrounded by a pond built as a fire water reservoir.
The winemaking facilities are located six floors below this unique site, reaching a depth of 30 meters.
The first level houses the offices, a wine store, a tasting room, a flexible area for events and the laboratory, which is separated into two sections: research and conventional analysis.
On the upper level the grapes are harvested after the harvest; on the lower level the vinification process is carried out in tanks; and on the third level the aging process is carried out in barrels.
In this way, the wine moves under its own weight, avoiding the need for pumps to preserve as much of the fruit's attributes as possible.

The vineyard of the Baigorri winery carefully selects its plots in the countryside. The grapes used in their wines are grown sustainably, in harmony with nature, using both traditional and modern technologies. They grow on old vines, deeply rooted in our country and our culture, and provide us with an unmistakable flavor.
