Chaffardon is an institution in his own right when it comes to the natural wines of Anjou. His oenological experience dates back to the late 1980s. In 1994 he was moved by the wines of Pierre Overnoy in the Jura and by those of the Gramenon estate.During those years he discovered organic farming, which has been fundamental from the beginning until now. Always surrounded by nature and working the land with his own hands. All the grapes come from unirrigated land. This winegrower and oenologist benefits from his facility for creation and cultivates his vines like a garden, mainly on old vines.

Vinification is as simple as possible to guarantee natural purity: indigenous yeasts, little or no sulphur, no fining, no filtration. The reds are whole bunches in vats, and the whites in oak barrels.Didier's trademark, this artist, alchemist, winegrower, is the search for good wine maturity. And, of course, to take the risks to which he exposes himself. He produces uncompromising wines, with a lot of volume and personality. Typical of him, of course.
