The history of this winery dates back to 1630, when Charles Ballot's maternal family acquired its first vineyards. It was in the 18th century that the Domaine was formally established. Over more than two hundred years, the domaine has been preserved and expanded with vineyards inherited from Charles' paternal grandmother and more recently from his cousins.Charles Ballot, the current vigneron, represents the sixteenth generation of winemakers in his family. From a very young age, Charles breathed in the winemaking environment, training in the cellar with his father. After an enriching experience in the vineyards of New Zealand and California, he returned to Burgundy in 2000 to take over the family business, bringing a balance between tradition and modernity.
Vineyards
Ballot-Millot covers more than ten hectares of vineyards located in the prestigious Côte de Beaune. Of these, eight hectares are planted with Chardonnay in the communes of Meursault and Chassagne Montrachet, while two hectares are dedicated to Pinot Noir in Pommard, Volnay and Beaune, along with half a hectare of Aligoté. The terroir of this region is extremely varied, composed mainly of chalky and clay soils, which give a unique character to each wine produced.
The climate of Burgundy is continental, with cold winters and warm summers that allow the grapes to ripen optimally. The average age of the vines is 45 years, which contributes to the complexity and depth of the wines produced at this winery.

Charles Ballot is deeply respectful of its heritage and committed to environmental sustainability. It is currently in the process of transitioning to organic farming. Cultivation techniques at Ballot-Millot combine traditional methods with modern practices. The vines are tilled by hand and the use of chemical herbicides is avoided, using treatments only when absolutely necessary. The key is not to stress the vines and to be in tune with the signals provided by nature.
Each year, Charles adapts his practices to the specific climatic conditions, an approach that keeps his work interesting and challenging. This adaptability and connection with nature allow him to create wines of great quality and authenticity.
Winemaking at Ballot-Millot follows a meticulous, artisanal process. Careful pruning and controlled weeding ensure optimum yields, while the grapes are harvested exclusively by hand, selecting the best grapes directly from the vineyard. In the modern winery, the white grapes are slowly pressed at low pressure, and the must is fermented in barrels with indigenous yeasts at natural temperature.
Malolactic fermentation follows, allowing the wine to age for approximately twelve months in the same barrel without batonnage. The use of new barrels is moderate, between 10% and 15% for the"Village" appellations and 20% to 25% for the"Premiers Crus", depending on the characteristics of the year.
In autumn, the white wines are racked and blended in stainless steel tanks, thus regaining their freshness before being bottled at the beginning of the following year, after light filtration. The aim is to obtain pure, elegant and balanced white wines.
For the red wines, the extraction is gentle and progressive. After a pre-fermentative cold maceration of five to seven days, alcoholic fermentation begins, which lasts approximately three weeks at a maximum temperature of 28 degrees. The wines are aged in barrels, where malolactic fermentation takes place, and then blended in tanks before bottling. This technique produces fruity, charming and powerful red wines.
