Patrick Desplats began his career as a winemaker in 2001, when he opened Domaine des Griottes with Sébastien Dervieux, in Saint Lambert du Lattay, Maine-et-Loire (France). Although they did so with only a few hectares, today, they each have their own natural wine cellar.

This talented winegrower works in organic farming with the use of animal ploughing. Les Griottes is almost 9 hectares in size. Patrick cultivates his vineyards on soils composed mostly of Scythian. One can say that the farm is a living ecosystem, as the whole environment is surrounded by vegetation, fruit trees and animal species, such as chickens, geese and ducks. In his vineyards he grows chenin, cabernet sauvignon, pineau d'aunis, gamay, grolleau, chardonnay and sauvignon.
The wines of Patrick Desplats
Vinification is completely natural, no sulphur or sulphites are added. The wine is bottled without fining or filtering. The wine is made using vertical presses that respect the integrity of the grapes. His Épona 2017, for example, is macerated on the skins for a month and fermented spontaneously with indigenous yeasts. The wine was aged for 12 months in fibre vats.- ;
