Celler Pardas is the personal challenge of Ramón Parera and Jordi Arnal, owners of Can Comas estate, who try to capture nature's essence and bottle it in the form of matchless and uncommon wines. These wines have a ‘before' and an ‘after': in the year 2004 they presented their first wine in the market, a Xarel.lo wine named Pardas, ever since they have set a trend where the prevailing notes are indigenous grapes indigenous from the Penedés region, in the past the area had great productions of bland and basic wines.
Bodega Pardas is placed at Torrelavit County, Alt Penedés, and 400 metres above sea level enjoying a mediterranean temperate climate with mild temperatures. The property has 30 hectares of forest and vineyards landscape, distributed in three zones (planes or plains, obagues or shaded and costers or coastal) with very different peculiarities that will give each wine a unique personality. Grapevines cultivation is natural and the less intrusive possible, walking around the land we can see goblet pruned vines with abundant vegetation covering it, thus avoiding erosion. The idea behind is to let vines express itself and support it during the vegetative cycle, so Pardas wines reflect very well how the year has been.
In 1996, Ramón and Jordi, purchased Can Comas estate, built the winery and launched its first wine into the Spanish market on 2004. A decade has already elapsed and surely Can Pardas wines cause enthusiasm and arouse impressive sensations once you taste them.
Enthusiastic? Let's see Pardas magic: Pardas Rupestris is a wine produced with Xarel.lo, Malvasía, Macabeo and Xarel.lo Vermell grown in a calcareous soil slopes. A balanced but simple wine. Pardas Xarel.lo is the starting point of Pardas project. A great wine aged in oak barrel, where the wood is hardly noticed and prepared to evolve incredibly for years in the bottle. Pardas Aspriu Xarel.lo is original from a vineyard named “La Lola” with clay-lime soils poor in organic matter. Wort is fermented party in concrete deposits and the rest in 300 litres capacity vats. The resulting wine is vigorous, shocking and suitable to drink with any meat, either red or game food. Pardas Sumoll Rosado is produced with the autochthonous grape Sumoll, that Pardas made fashionable at Penedés when they launched this rosé wine: a spruce, bitter, aniseed wine with rosé soul. Pardas Collita Roja is the blend of 5 vines of Sumoll and Marselan planted by the grandparents… autochthonous, peasant vines! A unique and matchless wine suitable for vigorous wine lovers only. Pardas Negre Franc is the result of five different plots with clay stony soil that have Cabernet Franc, Cabernet Sauvignon and Sumoll vines. It is perhaps the less risky option of all their collection, having a traditional disposition. Finally Pardas Aspriu Negre, another pleasing interpretation of Cabernet Franc grape, very different from the original from Loire.
