The Dehours & Fils winery, founded in 1930, is located in the heart of the Marne Valley, 15 km from Epernay, in the prestigious Champagne region of France. This winery was established by the grandfather of Jérôme Dehours, who now runs the estate. Jérôme, after studying in Avize (Champagne) and Beaune (Burgundy), joined the family domaine, initially working with business partners. In 1996, he took over the reins of management, succeeding his father and further developing the winery.
Together with his brother-in-law, Jean-Marc Laisné, Jérôme focused on highlighting the diversity of each plot in his vineyard, which led to the creation of his first single plot cuvées, Les Genevraux and Brisefer, in 1999.Vineyards
The Dehours & Fils vineyards are spread over 40 plots, mainly planted with Pinot Meunier. The terroir is characterised by a combination of clay and sand on a chalky subsoil. The winery practices environmentally friendly viticulture, avoiding the use of herbicides and mechanically tilling the soil. From the beginning of June, they allow the grass to grow naturally, maintaining it until the end of the following winter. Disease control is carried out by specific measures such as weeding, careful training of the vines and early leaf removal on the side exposed to the sun. Dehours & Fils was one of the first wineries to obtain HVE3 certification, demonstrating its commitment to reducing the use of chemicals and promoting biodiversity.
Philosophy
Dehours & Fils ' winemaking philosophy focuses on respecting the identity and diversity of each terroir. Harvesting takes place at full maturity and the grapes are carefully selected. Vinification is carried out in small stainless steel tanks for blended cuvées and in wooden barrels of various sizes for single vineyard cuvées. They use selected yeasts for fermentations and have reduced the use of sulphur in their wines, experimenting with sulphur-free methods since 2014. The musts are naturally clarified, without filtration or fining before bottling, which is done late in June or July.
The Dehours & Fils winery, located in Mareuil-le-Port, a village in the Vallée de la Marne west of Epernay, covers a total of 14 hectares. This winery owns a mosaic of 42 vineyards, spread over the villages of Mareuil-le-Port, Oeuilly and Troissy, each with different sun exposures, soils, vines, heights, ages and, consequently, numerous nuances. Jérôme Dehours has led the winery since 1996, implementing herbicide-free viticulture. The predominant variety is Meunier, but Dehours manages to extract more finesse and elegance from this variety than other producers with different grapes.
