In Mâconnais, Burgundy is the natural wine cellar Domaine Sauveterre, owned by Jérôme Guichard, a quiet, hard-working person who spends most of his days in the vineyards. In 2011 he bought a farm and vineyard, less than three hectares in size, which had belonged to Monsieur Blanchard's family for several generations. Domaine Sauveterre Vineyard
These old vineyards were Chardonnay, worked and cared for organically since 1917. They are surrounded by forest and planted on a classic Burgundian mix of clay and limestone, which guarantees great biodiversity.
Jérôme Guichard, far from doing something different, has continued and improved Blanchard's work. He has put the focus on the importance of keeping the vines healthy in a natural way, through the use of herbal plants and organic teas.
Domaine Sauveterre wines
In the cellar, alcoholic fermentation is spontaneous on indigenous yeasts. The wines rest for a minimum of 18 months, or until they are ready, in the bottle before disgorging. Nothing is added at any time. The result is an exquisite, different, aromatic and lively Chardonnay.
