Buy Wine from Celler La Salada
In 2011, Toni Carbó and his wife Anna started the Celler La Salada winery in the Parellades de El Pla del Penedés.
They decided to follow the path of Toni's grandfather and father, who never treated their land with chemical synthesis products.
Their aim since then has been to make natural wines that adapt to the lunar cycles and express what is inside the land where the vines are planted.
For this reason, today Toni Carbó represents the new generation of oenological artisans who make natural wines as the winegrowers of yesteryear did, respecting the grapes and nature to the utmost.
Toni started when he worked alongside Ramón Jané at Mas Candi and now, thanks to their friendship, they continue on a common path towards the most natural expression possible of their own varieties.
Their work in the winery is in accordance with the philosophy of little intervention, and they demonstrate that, with great rigour and without sulphites, it is possible to ferment wild yeasts to obtain wines with fruity, floral aromas and with the purity of the varietal character.
History of Celler La Salada
Toni's ancestors were farmers who cultivated the land and produced grapes, part of which was sold and the rest they made wine for their own and their family's consumption.
The name La Salada pays homage to the house where Toni Carbó's great-grandfather was born. Toni's grandfather and father bought some of the poorest plots of land; they were the ones they could afford, amounting to a total of 5 hectares, all of them on hillsides.
However, in the 1990s, the winery went out of business until Toni decided to bring back the old family winery. From there, the family started to think about bottling their own wines at home; they had already done it before in other facilities.
Ecological viticulture and lunar cycles
This winery works entirely organically, following the lunar cycles, just as their ancestors did.
Another activity that is practised is the control of the vigour and yield of the plants, and the land is only tilled when the weather is favourable.
Toni Carbó and Anna Serra are not in favour of uprooting the old vines or mechanising everything to obtain more kilos, which allows for more sublime wines.
On the other hand, this winemaker does not register his wines with the DO label because his commitment should be to the land and not to paperwork.
His wines reflect the intense character of the terroir and the traditional varieties with which he makes his wines, such as xarel-lo, macabeo, malvasía and sumoll.
