Etienne Thiebaud's hands are behind the famous Domaine des Cavarodes winery. A true artist, he started making his own natural wine in the village of Cramans, in the northern part of the Jura in 2007. He cultivates his vineyards organically and ecologically, with the intention of making them fully biodynamic.

The die has been cast for this artist winegrower who acquired a few plots of vines between 60 and 120 years old. Today, Etienne owns 4.5 hectares of vineyards: Lumachelles, which is in the commune of Mouchard, north of Arbois (where he has Chardonnay and Trousseau), Guille Bouton in Arbois (where he has Chardonnay) and Les Messagelins, which is also in Arbois (where he has Trousseau). The vines group together three main appellations spread over different terroirs: calcareous soils, calcareous scree on marl and marl.
The plots are cultivated with different varieties typical of the Jura, some very old, others very rare. The farm is tilled and treated with a mixture of Bordeaux and sulphur, always taking care to limit the doses. The vines are pruned and bottled according to the lunar calendar, and a very curious fact is that they use herbal infusions.
Domaine des Cavarodes wines
Domaine des Cavarodes wines are made in the most natural way possible. They are incredibly pure. The reds are macerated semi-carbonic, after careful destemming and aged in French oak vats. Some are vinified without sulphur, others with a maximum of two grams of sulphur per 100 litres. No filtration of any kind is used for the reds, and for the whites only if necessary. SO2 is not applied during the ageing process. Bottling is carried out without fining and without added sulphites.
