Description
Louis Latour Chablis stems from a historic estate founded in 1797, but its ethos here does not look back to the past with nostalgia, but rather to the soil. At Louis Latour Chablis, Louis Latour interprets Chablis through the lens of purity: without embellishment, without excess, allowing the landscape to speak for itself. It comes from vineyards situated in this northern enclave of Burgundy, halfway between Dijon and Paris, where the cool climate and Kimmeridgian and Portlandian limestone soils give rise to wines that are taut, straightforward and deeply mineral. Made from Chardonnay grapes grown on vines around 30 years old, this wine reflects a clear philosophy: the less the oak intervenes, the clearer the voice of the terroir will be. That decision—almost militant in a region where oak so often sets the tone—gives this French Chablis its character.
Production
The winemaking process at Louis Latour Chablis focuses on precision and transparency. The grapes are harvested mechanically and fermentation takes place in the traditional manner in temperature-controlled stainless steel tanks. Malolactic fermentation is carried out in full to round out the acidity without losing the wine’s tension. The wine is then aged for between 8 and 10 months in stainless steel before bottling. With no oak ageing, and no toasty or vanilla notes, everything is designed to preserve the varietal freshness, aromatic purity and steely profile characteristic of the finest Chablis wines. The result is a clean, vibrant white wine that remains true to its limestone terroir.
Taste
On the nose, Louis Latour Chablis is subtle and precise, with notes of citrus, lime blossom and a hint of damp stone. On the palate, it is fresh on entry, with a rounded texture at first, but its backbone soon emerges: lemon, citrus zest, subtle white fruit and a pronounced limestone minerality. The finish is long, clean and crisp, with that salty, steely profile that makes this mineral white wine a magnificent accompaniment to seafood, oysters and fish. Classic, straightforward and very authentic.
