Description
Anders Frederik Steen does not make wines to conform to a classical idea of purity, but rather to pursue a specific emotion born of fruit, time and landscape. In *Tout Ce Qui Est Beau Revient*, this quest becomes particularly moving, as he takes a rich, intensely aromatic 100%Gewürztraminer —marked by a beautiful noble rot—and guides it to a deeper, more serene and far less obvious place than the variety usually offers. This is not an exuberant, easy-drinking Gewürztraminer, but a bold interpretation, in which Steen places his trust in the raw material and in patience as few others do. There is something very much his own in allowing the wine to find its own form, without haste, without premature adjustments, even waiting almost two years until oxidation began to leave its mark. That is not merely a technique; it is a winemaking philosophy.
In Alsace, the historic cradle of great white wines with immense personality, Gewürztraminer finds a cool climate, a long ripening period and a tradition that favours both aromatic intensity and texture and complexity. This Alsatian white wine is part of that landscape, but from a deeply free and personal perspective.
Production
The grapes for Anders Frederik Steen’s ‘Tout Ce Qui Est Beau Revient’ were pressed immediately on the day of harvest to extract the full aromatic richness of the fruit and the botrytis. After a few days of oxidation, the must was transferred to fibreglass tanks, where it fermented slowly over the winter. In the spring of 2021, the wine was racked, giving it just the right amount of time to develop those notes of lees and hints of autolysis. It then completed its fermentation in the cellar and spent three and a half years in old, unfilled barrels.
Taste
The nose of Anders Frederik Steen’s ‘Tout Ce Qui Est Beau Revient’ offers dried rose, orange peel, spiced quince, dried apricot, ginger, wax and a hint of fine yeast. On the palate, it is full-bodied, enveloping and serious, with ripe fruit, notes of walnut, spiced bread and herbal tea. Oxidation lends depth and balance. The finish is long, complex and quietly beautiful.
