Description
Giboulot Côte de Beaune Blanc Combe d'Eve is a white wine produced by Domaine Emmanuel Giboulot, one of the most renowned producers in the Burgundy region for its commitment to biodynamics. This wine comes from Chardonnay vines over 40 years old located on the slopes of Beaune, specifically in a small plot called Combe d'Eve, located above the Beaune Premier Cru Les Bressandes. The vineyard is planted on a clay-limestone soil, which contributes to its minerality and freshness.
Winemaking
The grapes are harvested by hand to ensure the highest quality of the grapes. The whole grapes are directly pressed and the must undergoes a cold racking for the first 24 hours. Fermentation is carried out with indigenous yeasts in used oak barrels, which allows the purity and expression of the terroir to be maintained without excessive interference from the wood. Subsequently, the wine is aged for 18 months in oak barrels, in contact with its fine lees, which gives it greater complexity and depth.

Giboulot Côte de Beaune Blanc Combe d'Eve stands out for its elegance and freshness. On the nose, it displays an aromatic range that includes white flowers, citrus fruits and subtle mineral notes that reflect the clay-limestone soil from which it originates. On the palate, the wine offers a creamy texture, with well-balanced acidity and a fresh sensation. Notes of fresh butter and a mineral touch add complexity, while the finish is long, with a lingering freshness and a defining minerality.
This wine is ideal to accompany dishes such as seafood, firm-fleshed fish, and even more modern combinations such as sushi and other raw fish, enhancing the dining experience.
