Description
Giboulot Côte de Beaune Blanc Les Pierres Blanches is made by Emmanuel Giboulot, one of the pioneers of biodynamic viticulture in the Burgundy region, certified since 1996. The vineyard is located on the slopes of the Beaune Mountain, at an altitude of between 300 and 370 metres, in a privileged location just below the Premier Cru "Les Bressandes". The soil is composed of white calcareous lava with the presence of marine fossils and barium inclusions, which gives the wine a great minerality.
The wine is composed entirely of Chardonnay from vines approximately 40 years old, which are cultivated under strict biodynamic principles. Yields are low, favouring greater concentration in the grapes. The grapes are harvested by hand, ensuring a rigorous selection of the best bunches.
Winemaking
The vinification process is meticulous and seeks to preserve the purity and expression of the terroir. The grapes are pressed in whole bunches, which guarantees a more delicate must. The must is cold decanted for about 24 hours before fermenting in used oak barrels (to avoid excessive oak influence on the wine), using only indigenous yeasts. Fermentation is carried out slowly, maintaining controlled temperatures to preserve the freshness and primary aromas of the grapes.
Ageing is extended for 15 months in barrels with their fine lees, which adds an unctuous texture and greater complexity to the wine. This prolonged contact with the lees also contributes to improve its longevity, allowing a cellaring time of between 5 and 10 years.
Taste
Giboulot Côte de Beaune Blanc Les Pierres Blanches has a highly mineral profile, derived from its particular chalky soil. On the nose, it offers a floral bouquet with notes of citrus fruits, such as lemon, and ripe fruits. The palate is balanced and fresh, with a lively acidity that accompanies its white fruit flavours and a long, saline finish. The ageing on the lees gives it a creamy texture and a depth that can be felt in every sip.
This wine is particularly well suited to pair with oily fish, seafood and cheeses such as Epoisses or Soumaintrain, taking advantage of its structure and freshness to complement rich, unctuous dishes.
