Description
Giboulot Bourgogne Hautes-Côtes de Nuits Rouge En Grégoire is a wine from the famous Burgundy region, specifically from the Hautes-Côtes de Nuits appellation. Produced by Domaine Emmanuel Giboulot, this wine is made in a biodynamically farmed vineyard, certified since 1985, with 100% Pinot Noir grapes . The vines are planted on soils rich in clay, limestone and white marl, with a southern exposure that favours the development of the grapes.
Winemaking
The production process of Giboulot Bourgogne Hautes-Côtes de Nuits Rouge En Grégoire follows traditional and completely natural methods. The grapes are harvested by hand, with spontaneous fermentation in open wooden vats, without additives or commercial yeasts. Traditional pumping over and pigeage are carried out for about three weeks, with a maceration that extracts all the aromatic and structural richness of the Pinot Noir. The wine is aged for 11 to 18 months in used oak barrels to preserve the purity and personality of the terroir.
