Description
Giboulot Rully 1er Cru Blanc La Pucelle isa white wine made from 100% Chardonnay, coming from vineyards located in the Côte Chalonnaise, Burgundy. Emmanuel Giboulot is a pioneer winegrower in organic and biodynamic viticulture, cultivating some 12 hectares spread over several plots in the region. This particular wine comes from a plot with clay-limestone and stony soil, which gives great minerality and depth to the wine. The vineyard is located on an east-facing hill, which guarantees excellent sun exposure. The vines are over 30 years old, which contributes to the complexity and character of the wine.
Winemaking
The grapes are harvested by hand, followed by direct pressing of the whole grapes. Fermentation is carried out with indigenous yeasts in used oak barrels, which preserves the freshness and purity of the flavours. The wine is aged on its lees for 18 months, giving it a creamy texture and a rich, structured character.
Taste
Giboulot Rully 1er Cru Blanc La Pucelle is distinguished by its depth and tension. The nose presents notes of stone fruits, such as apricot and peach, accompanied by hints of honey and hazelnut. On the palate, the texture is creamy, with a lingering minerality that balances the fruit flavours and lightly toasted and vanilla notes. The finish is long, with vibrant acidity suggesting excellent ageing potential.
This wine is ideal to accompany poultry dishes with creamy sauces, oily fish and mild cheeses, standing out especially in its gastronomic versatility.
