Description
High on the volcanic slopes of Mont Brouilly, where the blue soils of granite and metamorphic rocks impose their character, Bonnet Cotton Côte de Brouilly La Chapelle is born, one of the most vibrant voices of contemporary Beaujolais. Pierre Cotton, the son of winegrowers, returned to the family winery after years of mechanical and oenological training, with a clear vision: to recapture the rawest, most sincere and natural identity of his land. In 2014, he decided to vinify his first solo parcel - the celebrated 100% Cotton cuvée - and since then, he has not stopped pushing the boundaries of Gamay.
La Chapelle is a micro-plot located just below the chapel that crowns Mont Brouilly, a steeply sloping terroir with bluish granite soils, where Gamay reveals its most serious, mineral and vertical profile. There are no concessions to artifice here: certified organic viticulture, extreme manual labour and an almost ascetic commitment to the pure expression of the soil. The vines, with an average age of around 60 years, are deep, resilient, and produce grapes with thick skins and intense aromatic intensity, but never exuberant.
Winemaking
The grapes are harvested by hand in small crates, in order to preserve the integrity of the cluster as much as possible. Fermentation is whole-cluster, following the traditional Beaujolais semi-carbonic maceration, but with a contemporary twist: no sulphur added at the start, with indigenous yeasts and no artificial temperature control. Maceration lasts about three weeks, slowly extracting structure and energy without losing freshness.
After devatting, the wine rests for 8 to 10 months in old oak foudres, allowing micro-oxygenation without adding woody notes or detracting from the mineral character of the terroir. Finally, it is bottled without fining or filtering, with only a minimal dose of sulphur, only when strictly necessary. Everything is focused on preserving the tension, the electric vibration of the place.
Taste
From the first contact in the glass, Bonnet Cotton Côte de Brouilly La Chapelle shows an intense but reserved nose, almost cryptic at first. Notes of wild black cherry, wet graphite, dried leaves and an earthy trace reminiscent of rusty iron or broken flint. With air, there is a faint floral flare - violets and dark lilacs -but always restrained, no frills. No sweet fruit or easy caramel: this is an austere, upright, almost Spartan Gamay.
On the palate, the entry is sharp, with a lively acidity that runs through the palate like a mountain stream. The tannins are present but fine, perfectly integrated, enveloping a core of dried black fruit, shady plum, and a saline background that lengthens the finish. There is tension, there is depth, but also a sensation of structural lightness that makes it addictive.
Ideal with small game dishes, autumn mushrooms or a simple board of cured cheeses. A Beaujolais that moves away from the fruity stereotype and into serious Burgundy territory. Pure volcanic energy in a bottle.
