Gamay is a very ancient variety of the Burgundy area, with early budding and ripening. In the past, Gamay wines were light and fruity, and those who rushed to produce wines following winemaking techniques such as carbonic maceration, in the attempt to reach the market in November, labelling the wines as Beaujolais Nouveau, found themselves with diluted wines that had banana and chewing-gum aromas. After the decline in the demand of this kind of wines and the growing request for well elaborated wines and other more traditional winemaking techniques, sometimes through barrel ageing, Gamay producers started to change their profile into fine, fresh, spicy wines, with intense red fruits taste. Some of the ten Beaujolais crus that amaze for its longevity are (in ascending order): Chiroubles, Saint-Amour, Fleurie, Régnié, Brouilly, Côte de Brouilly, Juliénas, Chénas, Morgon and Moulin-à-Vent.
