Winemaking
Semi-carbonic maceration with indigenous yeasts in concrete tanks. Aged for 12 months in used oak foudres.
Description
In the heart of the Côte de Brouilly, between gentle volcanic hills and blue soils of crumbling granite, is the intimate project of Pierre Bonnet and Marine Cotton, a couple who decided to reinterpret the Gamay with an unusual purity and an almost militant faith in the expression of terroir. Heirs to a traditional wine-growing lineage, they broke with the routine of the cooperative to vinify on their own, betting everything on clean, uncontrived viticulture. It was during a particularly difficult vintage - unforeseen rainfall, bunches decimated by powdery mildew - that they decided not to correct or intervene, allowing the wine to speak from austerity. That vintage was the turning point.
Bonnet Cotton Gamay comes from old vines grown on blue and pink granite soils, rich in mica and with a natural drainage that forces the roots to sink deep. Located within the Beaujolais-Villages, between Brouilly and Régnié, the vineyard is farmed organically and biodynamically without certification, out of conviction rather than by label. Here the semi-continental climate, with cool nights and sunny days, gives the grapes a vibrant tension. And the Gamay, far from the fruity cliché, shows here its most mineral and serious face.
Winemaking
The process begins with a manual harvest in small crates, selecting whole bunches with an almost surgical criterion. Vinification is carried out with semi-carbonic maceration in raw cement vats, without destemming or adding yeasts. Fermentation begins spontaneously with indigenous yeasts, and the must is kept without aggressive pumping over, only with gentle infusions to respect the delicacy of the fruit.
After alcoholic fermentation, Bonnet Cotton Gamay spends about 12 months in neutral wooden v ats and vats, with no added sulphites until bottling, and in some cases, unfiltered. The aim is not technical perfection but sincere expression of the vintage, the soil and the Gamay in its most naked form.
Taste
From the outset, Bonnet Cotton Gamay does not seek to please with sweet or easy floral notes. The nose is earthy and precise, with a slight reduction reminiscent of wet flint, followed by notes of sour cherry, pomegranate and an herbal background evoking wild sage and redcurrant leaf.
On the palate, it is sharp and linear, with vibrant acidity that glides like a granite blade. The palate is fluid but persistent, with finely grained tannins that add structure without being heavy. The finish is long, with a saline and spicy aftertaste, like licking a stone after the rain. It is not an indulgent wine, but an honest expression of Gamay without make-up, which demands attention and time.
