Winemaking
Semi-carbonic maceration with indigenous yeasts in concrete tanks. Aged for 9 months in used oak foudres.
Description
In the heart of Beaujolais, where the hills roll over pink granite soils and Gamay reaches one of its purest expressions, the Cotton family - now Bonnet Cotton, following the union of two winegrowing lineages - continues to work the vineyard with a fierce respect for the land. Pierre Cotton, young but with hardened hands, left his life as a motorbike mechanic to return to his roots and take up the family baton, but with a clear direction: organic farming, minimal intervention and a rebellious soul. The Bonnet Cotton Brouilly he makes with Marine Bonnet is not a complacent wine; it is a wine with character, born from old, deep vines that scratch the granitic subsoil in search of tension, freshness and a clear identity.
The plot is located on the northern slopes of Brouilly, where the climate is somewhat cooler and the granite more compact. Here, the Gamay shows another side: less sweet, rawer, sharper. Bonnet Cotton Brouilly is a testament to this land and this courageous decision to make wine without artifice, letting the vintage, the plant and the stone speak clearly. No added yeasts, no aggressive filtering. Just Gamay, granite, patience and a radically honest approach.
Winemaking
The grapes are harvested by hand, selected bunch by bunch, and fermented whole in concrete vats, following the classic Beaujolais semi-carbonic maceration, but without looking for fruitiness: here we are looking for structure, nerve. Fermentation is carried out with indigenous yeasts, without violent pumping over, just by slowly infusing the essence of the fruit. After fermentation, the wine rests for 8 to 10 months in used foudres, large oak casks that do not provide wood, but rather breath, roundness and an enveloping texture. Unclarified, unfiltered, with minimal doses of sulphur dioxide just before bottling.
Taste
The first impression on Bonnet Cotton Brouilly is one of tense calm: no aromatic explosion, but an atmosphere of deep whispers, where each note appears slowly, as if the wine needs time to trust. Notes of wild blueberries, black plum skin and that echo of graphite so typical of granite appear. A hint of dried violets and damp earth, almost a note of wet stone after rain. On the finish, some white pepper, subtle and persistent. On the palate, the attack is direct, firm, with a juicy acidity that carries tension and lengthens the wine on the palate. There is no easy sweetness here, but a restrained energy, a fresh heartbeat more reminiscent of a Côte de Nuits Pinot than the fruity cliché of Gamay. The tannin is polished but present, and it goes well with small game dishes, mushrooms or cured cheeses. The finish is long, dry, with a slight bitterness that recalls the nobility of the grapes and the dust of the road.
A wine that does not seek to flatter, but to express. Brouilly a la Cotton: raw, honest and lively.
