Philippe Chatillon is a natural winegrower who treats grapes in a special way. He believes that sound waves help to balance the wines in the cellar. To create this energy, he uses a crystal harp and singing bowls. This is called bio-harmony.
Philippe Chatillon's vineyard
Chatillon worked for 18 years as estate manager at Domaine La Pinte à Arbois, but then had the ambition to build something of his own, as a producer of artisanal wine. In 2013, he created his own winery by planting savagnin vines on a hillside in Passenans, Côtes du Jura (France). He also planted other grape varieties such as melon queue rouge, gamay, pinot noir and chardonnay. All organically farmed. Soon, this distinguished winegrower chose to follow his passion and adopt organic and biodynamic methods. A technique that requires special attention and a greater presence in the vineyards. In fact, he works on his estate with a pickaxe and a backpack sprayer.His Domaine, in Poligny in the Jura, covers some 1.95 hectares in Arbois, 1 hectare in Monay Passenans and Côtes du Jura, and 0.20 hectares in Château-Chalon. The grapes are harvested entirely by hand. The grapes are harvested with great care to preserve their quality. They are picked in comportes (small crates), which arrive whole at the winery, to avoid oxidation. Chatillon does not use herbicides or synthetic chemicals. Only natural products: horn manure, compost tea that ferments for 24 hours. It consists of a mixture of algae and fungi that is spread on the soil, and is thus protected.

Philippe believes that a good wine is made in the vineyard, without chaptalisation or yeast. The grapes are aged in barrels in an old 17th century cellar. In this way, ageing brings energy to the red wine, and softness to the whites. If there is one characteristic that sets this winemaker apart, it is his musical-spiritual side. He brings this energy by working in bio-harmony with his wines. There is no filtration or fining, he bottles by gravity. This is where the true encounter between the energy of man and the energy of nature takes place. A full-fledged synergy.
