The isolated Chablis region is located at the banks of Serein river, within Yonne department and only 180 kilometres away from Paris. Only the Chardonnay noble variety is cultivated here in a peculiar mixture of clay and calcareous limestone soils, and where one of the best Chardonnay wines are obtained worldwide, pretty different from those produced only 150 kilometres south, at Côte de Beaune.
Chablis wines are hard when young, exhaling clear tastes of wet stone, minerals and with some green grass notes. Chablis Grand Cru and Premier Cru have personality and supporting acidity, so they need more years in bottle to improve their quality.
Chablis is a hillside facing southwest in the north of the city. Here all the Grand Crus are placed in perfect straight lines, next to some of the best Premier Crus. These acclaimed vines grow on brittle limestone soils, grey or even white, called Kimmeridge (oyster fossils layer), a small town in Dorset.
Chablis vineyards are very near to the north limit for growing grapevines with success. Grapes cannot develop until early spring, when temperatures reach an average of 10ºC, and berries have to ripen before the leaves start falling on autumn. Therefore, the frosts are a relevant factor to be taken into account.
According to the Chablis wines classification, there are four wine types: Chablis Grand Cru, which are found in a unique block south-west facing, over the town and the river. This is only a 2% of the total production of Chablis wines and takes up to 100 hectares. Chablis Premier Cru has a total of 79 classified districts, where the north side of Serein river is certainly the best. AOC Chablis represents a total of 3.000 hectares distributed all over the department and 700 hectares at Petit Chablis, these wines are currently surprising the wine critics for its remarkable quality. Petit Chablis is a dry wine, with personality and nerve though not as aromatic as Chablis is.
The best producers nowadays are: Patrick Piuze, William Fevre, Vincent Dauvissat and Domaine Raveneau.
