Description
The story of this wine begins in the heart of Chablis, the "golden gateway to Burgundy", where the Billaud Simon winery decided to capture the purest essence of Chardonnay in its freshest and most direct expression. Far from the Grands Crus, Billaud Simon Petit Chablis was born from the desire to offer a wine that is accessible but with soul, one that honours the terroir without artifice. Planted on Jurassic soils rich in marine fossils, and exposed to the cool, Atlantic climate of the Serein Valley, this wine reflects the vibrant, taut minerality for which the region is famous. The variety is 100% Chardonnay, grown and harvested with precision, always with respect for the soil and its chalky, austere character.
Winemaking
The grapes for Billaud Simon Petit Chablis are hand-picked and sorted before being gently pressed to ensure the purity of the must. The must is clarified by cold settling (12 to 24 hours) in stainless steel tanks before fermenting naturally in the same tanks. The wine is bottled in spring, without ageing in wood, in order to preserve the lively expression of the fruit and its mineral energy. It is a clean process, true to the Chablisienne tradition: nothing stands between the grapes and the final wine.
Taste
Pale yellow colour with greenish reflections. On the nose, tense citrus fruits(lemon, grapefruit), green apple and white flowers, on a saline and mineral background. Lively on the palate, with a precise acidity reminiscent of wet chalk and limestone. The fruit remains restrained, giving way to a dry, linear texture. Billaud Simon Petit Chablis offers a refreshing finish, with a saline vibe that invites another sip. Ideal with seafood, oysters or white fish, it is a wine that speaks of the soil, the climate and an uncompromising philosophy.
