Description

Rossignol-Trapet is not a winery driven by artifice, but by conviction. When brothers Nicolas and David Rossignol took the helm of the domaine, they chose to commit fully to biodynamic viticulture at a time when this was by no means the easy path to take in Burgundy. It was a courageous decision, all the more so on such prestigious plots as Chapelle Chambertin Grand Cru, where any intervention is magnified. Their aim was not to embellish the wine, but to strip it back, allowing the vineyard to speak for itself with less interference. Rossignol Trapet Chapelle Chambertin Grand Cru, made exclusively from Pinot Noir, is produced in Gevrey Chambertin, in the very heart of the Côte de Nuits, on well-drained limestone and clay-limestone soils, in a continental climate that lends tension, depth and restrained ripeness. Here, Chapelle-Chambertin offers a particularly refined expression of the village: less austere than neighbouring crus, more silky, yet always underpinned by a firm and understated mineral foundation.

Winemaking

The winemaking process for Rossignol Trapet Chapelle Chambertin Grand Cru follows this same philosophy of precision without excess. The grapes are harvested by hand and rigorously selected to preserve the purity of the fruit from the moment it enters the winery. Following pre-fermentation maceration, fermentation is carried out with measured extraction, seeking structure and depth without losing the natural delicacy of the Pinot Noir. Maceration is extended as long as necessary to develop depth and complexity, before gentle pressing. The wine is then transferred to barrels, with around 50 per cent new oak, where it is aged for 14 to 18 months before bottling and continues to mature until bottling. The oak is not intended to dominate, but rather to refine the tannins, tighten the wine’s structure and support its development.

Taste

In the glass, Rossignol Trapet Chapelle Chambertin Grand Cru initially appears restrained, almost reserved, but soon reveals precise, fresh red fruit: cherry, raspberry and wild strawberry, alongside a darker nuance of plum. This is neither an exuberant nor a cloying wine; everything here is restrained, refined and taut. Subtle spices emerge, along with a faint creamy note, damp earth, undergrowth and a chalky undertone that runs through the whole. On the palate, it has a silky texture, fine tannins, lively acidity and a serene depth. The finish is long, mineral, fresh and elegant, with that combination of nobility, energy and subtlety that distinguishes the great Burgundies.
