Description
Rossignol-Trapet was born out of the union of two historic Burgundy lineages: the Rossignols of Volnay and the Trapets of Gevrey Chambertin. When Nicolas and David Rossignol took over the estate in the 1990s, they decided not to limit themselves to simply preserving the family legacy. In 1997, they began the transition to biodynamic viticulture, abandoning herbicides and synthetic products to revitalise the soil and allow each plot to express itself more clearly. A courageous decision in a region where any change means putting priceless vines at risk.
Rossignol-Trapet Chambertin Grand Cru is made exclusively from Pinot Noir sourced from two Chambertin Grand Cru plots, with vines mostly planted in the 1950s and a small section dating back to 1919. On this hillside in Gevrey Chambertin, the clay lends depth and structure, whilst the limestone imparts tension, aroma and a cool, persistent minerality. This is not a Pinot Noir built on fruit, but on the soil, time and precision.
Production
The grapes are harvested by hand and undergo rigorous selection. Fermentation of the Rossignol-Trapet Chambertin Grand Cru takes place using indigenous yeasts and with controlled extraction, prioritising texture and clarity over artificial intensity. Depending on the vintage, it may include a proportion of whole bunches. After around three weeks of maceration, the wine is gently pressed and undergoes spontaneous malolactic fermentation. Ageing lasts between 14 and 18 months in barrels, with between 40 and 50 per cent new oak. Racking is kept to a minimum and bottling is usually carried out without clarification or filtration.
Taste
Rossignol-Trapet Chambertin Grand Cru is initially reserved, almost austere. Once aerated, notes of peony, rose, raspberry, wild strawberry and sour cherry emerge, accompanied by black tea, delicate spices, damp earth and crushed stone. On the palate, it is firm, upright and deep. The tannins are precise, like raw silk, and the acidity underpins taut red fruit, with notes of blood orange, citrus peel and iron. The finish is long, chalky and progressive. A wine that demands patience, majestic without being heavy, whose true strength is expressed in a hushed tone.
