Winemaking
Romate Pedro Ximénez Duquesa is made exclusively with Pedro Ximénez, a grape that, after being harvested, undergoes an almost magical process: the "asoleo". Imagine the bunches of grapes lying under the Andalusian sun, slowly concentrating their sugars until they become sweet and aromatic little treasures. Then a gentle pressing extracts a thick, dense must, full of promise.
Time does the rest. After fortifying it with wine alcohol, Romate Pedro Ximénez Duquesa rests in oak barrels for eight years, in a slow dialogue with the wood that gives it depth and toasted nuances. This whole process results in a wine that is pure bottled pleasure.
