The Sánchez Romate winery, with more than two centuries of history, has perfected the art of making wines that excite. Its Amontillado Romate begins its life as a fino, protected by the famous velo de flor, that layer of yeasts that gives it freshness and a saline touch. But then the magic happens: it is fortified and undergoes oxidative ageing in American oak casks. This is where the wine changes, becomes more complex, deeper, more evocative. A process that lasts for years, even decades, and that gives us a glass full of nuances.
