Description
To speak of Jerez is to immerse oneself in a world of tradition, patience and art. And if there is one wine that encapsulates that essence, it is Romate Amontillado NPU. A jewel with history, made by Bodegas Sánchez Romate, a house that has been perfecting its craft since 1781. Almost two and a half centuries of experience is no mean feat.
Romate Amontillado NPU is made exclusively from Palomino Fino, the queen variety of the Marco de Jerez. Its vineyards grow in albariza soils, a white, almost lunar soil that retains moisture and nourishes the roots with essential minerals. The result? Grapes that capture the essence of the terroir and give life to unforgettable wines.
Winemaking
This is where the magic happens. At first, Romate Amontillado NPU ages under a veil of flor, a layer of yeast that protects it from oxygen and gives it that characteristic dry, sharp touch. But time is unforgiving, and over the years, the flor disappears, leaving the air to do its work. Thus begins the oxidative ageing, which gives it that richness, depth and bright amber colour that hypnotises at first sight. In total, we are talking about more than 18 years of ageing. In other words, almost two decades of waiting for each sip to be a unique experience.
Taste
If you close your eyes and approach Romate Amontillado NPU, you will notice an enveloping aroma of toasted hazelnuts and light nuances of tobacco, wood and a whisper of dried herbs. On the palate, it is pure balance: very dry, with a subtle acidity and a long finish, one of those that linger in the memory.
What to enjoy it with? A good Iberian ham, cured cheeses, nuts... But it also surprises with more daring dishes, such as grilled scallops or a braised pork cheek.
