Description
The red wine Gonzo is one of the long collection of wines from Stéphane Cyran, located in the Lorraine region of France. This wine is made exclusively from the Gamay grape variety, in a clay vineyard that is harvested in mid-September.
Winemaking
The vinification process is carried out naturally, without the addition of any additives. Fermentation is carried out with indigenous yeasts for three weeks with whole grapes, destemmed and in their juice, without pigeage or pumping over. Then, a blend of the press wine and the devatted wine is made. The wine is aged in fibre tanks before being bottled by gravity, without the addition of sulphur dioxide.
Taste
Gonzo has a savoury, earthy flavour, characteristic of Gamay wines. It offers dense black fruit accompanied by delicate tannins. On the nose, notes of blueberry, milk, light ash and purple plum are present. This wine has great ageing potential, but for those who prefer to enjoy it in the present, a brief decanting is recommended to allow it to express its full complexity.
