Free run fermented in oak with indigenous yeasts, destemmed grapes with 10% of whole bunches. Aged for 8 months in stainless steel tanks. Bottled unfined, unfiltered and without added sulphites.
Description
The Acratus red wine is a creation of Stéphane Cyran, made mainly from the Pinot Noir grape variety. This wine comes from a new plot in Bouligny of 0.6 hectares, which is slightly more exposed than others, receiving a cooling influence from the wind during the evenings. The quality of the fruit here is high, which led Stéphane to decide to vinify this plot independently.
Winemaking
The grapes were harvested and macerated for 12 days in whole bunches before being pressed and aged in stainless steel tanks.
Taste
Acratus is an impressive wine that reflects the characteristics that wine lovers appreciate in Stéphane's Pinots. It has a light structure with an exceptional balance of berries, earth and spice. This wine shows aromas of sweet fruits such as rhubarb and cherry. It also has earthy notes, but is extremely delicious and palatable. It is an ideal wine to enjoy at a picnic, as it is ready to be tasted and shared in a relaxed, open-air atmosphere.
