Description
In Sermiers, in the heart of the Premier Cru of the Montagne de Reims, Emilien Feneuil decided to look at Champagne without bubbles, like someone who turns off the music to listen to the breathing of the room. His idea of wine comes from the vineyard: years of biodynamic work and a philosophy of minimal intervention, more observation than imposition. Feneuil speaks of coherence rather than dogma; he says that, after a difficult vintage, he preferred to lose yields and wait for real maturity rather than "correct" in the cellar. It is this kind of silent courage that defines the project. Les Ruisseaux is a white Coteaux Champenois made from 100% Pinot Meunier, an almost provocative choice in a region where tradition tends to dilute varieties in blending and mousse.
Sermiers provides the nerve: northern climate, slanting light, cool nights, and those clay-limestone soils that give tension and a wet chalky minerality. Here the still wine is the litmus test: no carbon dioxide to soften, the terroir is exposed, without make-up.
Winemaking
Harvesting is done with precision, looking for healthy fruit and energy in Emilien Feneuil Coteaux Champenois Sermiers Blanc Les Ruisseaux. Fermentation with indigenous yeasts and long ageing in Burgundy type barrels: about 24 months, to gain depth without losing edge. The wood acts as a structure and micro-oxygenation, not as a perfume. Bottled with minimal intervention and sulphites contained only when necessary.
Taste
In Emilien Feneuil Coteaux Champenois Sermiers Blanc Les Ruisseaux, at the beginning it is restrained, almost severe. Fresh apple, barely ripe pear and an austere citrus -lemon peel- on a background of chalk, wet stone and fine salt. The palate enters straight, dry, with an acidity that narrows the gaze and cleanses the palate. The surprisingly silky texture is reminiscent of "liquid chalk": there is substance, but no weight. The Meunier adds a discreet, fleshy centre to the palate, then the mineral, long, chalky, insistent finish returns. An uncompromising Champagne white: pure, stony, gastronomic, for those who enjoy tension as a form of pleasure.
