Description
Drappier Réserve de L'Oenothèque is a living testimony to the history and tradition of the Drappier house. This champagne, preserved in the 12th century Cistercian cellars, represents a collection that highlights old and often very rare vintages. The Drappier family decides to uncork small batches, sometimes even a single bottle, when they consider that they are ready to reveal the intensity and originality of the year in which they were produced.
Winemaking
This exceptional champagne comes from vineyards located in the Aube region. Ageing on the lees lasts 15 years, a process that contributes significantly to the complexity and richness of its flavours. The sugar dosage is 4.5 g/l, indicating a Brut style. Malolactic fermentation is also completed, which helps to soften the acidity and bring roundness to the palate.
Taste
Drappier Réserve de L'Oenothèque is characterised by a rich golden colour with hints of copper. On the nose, there is a smoky charm, a product of the "magnum effect", followed by layers of dried citrus, summer fruits such as raspberry and strawberry, and yellow fruits such as barbecued pineapple and juicy peach. On the palate, it is a powerful and delicious champagne, with spicy notes and a strong mineral and chalky finish that keeps it light and refreshing.
