Another new micro-cuvée from Drappier is the NV Extra-Brut Clarevallis, a bottling that pays homage to the Abbey of Clairvaux, whose monks pioneered viticulture in Urville. Offering up aromas of crisp golden orchard fruit, white flowers and stone fruit mingled with hints of clear honey and green almonds, it's medium to full-bodied, fleshy and vinous, with fine depth at the core, tangy acids and a lively pinpoint mousse. Concluding with a chalky finish, this is well worth seeking out.

Description
Drappier Clarevallis is an expression of the purity and generosity of nature, inspired by the Abbey of Clairvaux founded by Saint Bernard. This champagne, reflecting both the landscape and the land cultivated since the 12th century, is a tribute to history and tradition.
Winemaking
Drappier Clarevallis is an organic champagne, made from grapes from the slopes of Urville, planted during the Cistercian period. The blend is dominated by Pinot Noir (75%), complemented by Chardonnay, Pinot Meunier and especially Pinot Blanc, also known as Blanc Vrai. The latter, a varietal that has almost disappeared in Champagne, provides an exuberant fruity note. Vinification takes place mostly (75%) in stainless steel tanks to preserve the freshness of the fruit, but a part is also vinified in wood, in barrels made of oak. After a slow fermentation, which produces very fine bubbles, the champagne is disgorged and dosed as Extra Brut (4g/l) with a liqueur made from organic cane sugar.
Taste
Drappier Clarevallis is characterised by its freshness and delicacy. On the nose, notes of elderberry, violet and other spring floral aromas, with a vegetal touch. The minerality is well present, softened by the maturity of the Pinot Noir. The palate is fresh and very delicate, with floral notes and a touch of citrus. The finish is long, marked by a pleasant bitter note.
