Disgorged in July 2018, the latest release of the NV Brut Rosé de Saignée is showing well, exhibiting aromas of red apples, white flowers, citrus oil and redcurrant. On the palate, it's medium to full-bodied, fleshy and incisive, with a generous core of fruit, racy acids and chalky grip on the finish.

Description
Drappier Rosé de Saignée is a unique expression of Champagne, standing out for its winemaking method and distinctive flavour profile. This wine is made exclusively from Pinot Noir, a varietal that gives it a characteristic intensity and depth.
Winemaking
Drappier Rosé de Saignée is made using the "bled" method, which involves maceration for several days. This process not only gives it an intense colour marked by the Pinot Noir, but also contributes to the concentration of aromas and flavours. Malolactic fermentation takes place naturally and the wine is not filtered, which preserves its freshness and purity. In addition, a minimum of sulphur and a dosage of 7.5 g/l is used. After bottling, the wine is aged for 2 to 3 years in the cellar, which contributes to its complexity and structure.
Taste
Drappier Rosé de Saignée is distinguished by its structure and purity of red fruit flavours. On the nose, notes of red fruits and violets are perceived, with a slightly spicy touch. On the palate, it is exceptionally expressive and fresh, revealing a subtle trace of liquorice on the finish. The bleeding technique gives the wine a more concentrated and intense aromatic palette, with a notable presence of raspberry, blackberry and a touch of citrus. The white pepper note underlines the maturity of the cuvée, adding an extra dimension to the flavour profile.
