The latest release of Drappier's NV Brut Blanc de Quatre Blancs Quattuor—an unusual blend of Arbanne, Petite Meslier, Blanc Vrai and Chardonnay—opens in the glass with an attractive bouquet of honeycomb, crisp yellow orchard fruit, dried white flowers, marzipan and toasted walnuts. On the palate, the wine is medium to full-bodied, broad and crisply fleshy, with a deep core of fruit, an elegant pinpoint mousse and tangy balancing acids, concluding with a long, nutty finish. This is a terrific rendition of this rare bottling, and it's more than a mere curio; indeed, it's well worth seeking out.

Description
Drappier Quattuor is an exceptional Blanc de Blancs, composed of an unusual blend of four grape varieties: Arbane (25%), Petit Meslier (25%), Blanc Vrai (25%) and Chardonnay (25%). This blend is not only distinctive but also pays homage to Champagne's forgotten grape varieties. The presence of Chardonnay adds an elegant and persistent note, balancing the blend with its classic character.
Winemaking
Drappier Quattuor follows a meticulous winemaking process. Only the juices from the first press, known as cuvées, are used, ensuring the highest quality. Vinification is done with low-pressure mechanical presses and pumping is avoided to prevent oxidation, maintaining the natural freshness of the wine. Furthermore, the use of sulphur is minimised and no filtering is carried out, preserving the authenticity and purity of the wine. After bottling, the cuvée is aged for at least three years in rhyme, with a dosage of 4.2 g/l, which contributes to its distinctive flavour profile.
Taste
Drappier Quattuor Extra Brut is characterised by freshness and minerality, elements that make it exceptionally appealing. On the nose, aromas of very fresh grapes and citrus fruits evolve into notes of apples and fig jam, all framed by a bouquet of white flowers. On the palate, this Champagne is surprisingly fresh, mineral and chiselled, with a very persistent finish. These characteristics make it ideal as an aperitif and perfect for pairing with dishes such as vegetable mille-feuille, seafood cream or beef carpaccio with white truffles.
